First Attempt at Tonkotsu

Overall I'm very pleased with it! Silky texture, creamy from the fat, and I feel like the shio tare I made was a good choice to match it with.

Served with pork shoulder chashu, menma, shiitake and woodear mushroom, green onion, ajitama and there's some noodles hidden under there somewhere.

the ajitama needed less time boiling and more time marinating, the yolks are too set for my liking but i suppose there are worse ways it could have gone wrong.
